Ingredients

  • 4 quails, cleaned and deboned
  • 1 cup pitted dates, chopped
  • 1/2 cup pistachios, chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped dates, pistachios, cinnamon, cardamom, salt, and pepper.
  3. Stuff each quail with the date and pistachio mixture.
  4. Heat olive oil in a large skillet over medium heat.
  5. Sear the stuffed quails for 3-4 minutes on each side until golden brown.
  6. Transfer the quails to a baking dish and roast in the preheated oven for 15-20 minutes, or until cooked through.
  7. Remove from the oven and let the quails rest for a few minutes before serving.
