Jellied Meat (racituri)
Jellied Meat, known as Racituri in Moldovan cuisine, is a traditional dish typically served during holidays and special occasions. This savory dish is made with meat, vegetables, and spices, and then set in a gelatinous broth.
Ingredients
- 2 lbs pork trotters
- 1 lb pork shoulder
- 1 onion, chopped
- 2 carrots, chopped
- 2 bay leaves
- 10 black peppercorns
- 1 bunch parsley
- 1 cup white vinegar
- 1 packet unflavored gelatin
- Salt to taste
Instructions
- Place the pork trotters, pork shoulder, onion, carrots, bay leaves, peppercorns, and parsley in a large pot. Cover with water and add the vinegar. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the meat is tender.
- Remove the meat from the pot and strain the broth. Discard the vegetables and spices.
- Shred the meat and place it in a mold or dish.
- Soften the gelatin in cold water, then add it to the strained broth. Stir until the gelatin is completely dissolved.
- Pour the broth over the meat in the mold. Refrigerate for several hours, until the broth has set into a jelly.
- Serve the jellied meat cold, sliced, with mustard and pickles on the side.
