Jellied Meat, known as Racituri in Moldovan cuisine, is a traditional dish typically served during holidays and special occasions. This savory dish is made with meat, vegetables, and spices, and then set in a gelatinous broth.

Ingredients

  • 2 lbs pork trotters
  • 1 lb pork shoulder
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 bay leaves
  • 10 black peppercorns
  • 1 bunch parsley
  • 1 cup white vinegar
  • 1 packet unflavored gelatin
  • Salt to taste

Instructions

  1. Place the pork trotters, pork shoulder, onion, carrots, bay leaves, peppercorns, and parsley in a large pot. Cover with water and add the vinegar. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the meat is tender.
  2. Remove the meat from the pot and strain the broth. Discard the vegetables and spices.
  3. Shred the meat and place it in a mold or dish.
  4. Soften the gelatin in cold water, then add it to the strained broth. Stir until the gelatin is completely dissolved.
  5. Pour the broth over the meat in the mold. Refrigerate for several hours, until the broth has set into a jelly.
  6. Serve the jellied meat cold, sliced, with mustard and pickles on the side.
