Jeow som is a traditional Laotian dipping sauce that is bursting with flavor and is perfect for serving with grilled meats, vegetables, or sticky rice.

Ingredients

  • 2-3 Thai bird's eye chilies, chopped
  • 3 cloves garlic, chopped
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 1/4 cup water

Instructions

  1. In a mortar and pestle, pound the chilies and garlic into a coarse paste.
  2. Transfer the paste to a small saucepan and add fish sauce, lime juice, sugar, and water.
  3. Bring the mixture to a simmer over medium heat and cook for 3-5 minutes, stirring occasionally, until the flavors meld together.
  4. Remove from heat and let it cool to room temperature before serving.
