Jerk Chicken Fried Rice
Jerk Chicken Fried Rice is a delicious fusion dish that combines the bold flavors of Jamaican jerk seasoning with the classic Chinese fried rice. This dish is a perfect representation of Caribbean Chinese cuisine, blending the best of both worlds into one satisfying meal.
Ingredients
- 2 cups cooked white rice
- 1 lb boneless, skinless chicken thighs, diced
- 2 tbsp jerk seasoning
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, toss the diced chicken thighs with the jerk seasoning until well coated.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are tender, about 3-4 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the empty side. Scramble the eggs until cooked, then mix them with the sautéed vegetables.
- Add the cooked rice and soy sauce to the skillet. Stir well to combine all the ingredients.
- Return the cooked jerk chicken to the skillet and stir to incorporate with the fried rice. Cook for an additional 2-3 minutes to heat everything through.
- Season with salt and pepper to taste. Serve the jerk chicken fried rice hot and enjoy!
