Jerk Chicken Fried Rice

Ingredients

  • 2 cups cooked white rice
  • 1 lb boneless, skinless chicken thighs, diced
  • 2 tbsp jerk seasoning
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the diced chicken thighs with the jerk seasoning until well coated.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are tender, about 3-4 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs onto the empty side. Scramble the eggs until cooked, then mix them with the sautéed vegetables.
  5. Add the cooked rice and soy sauce to the skillet. Stir well to combine all the ingredients.
  6. Return the cooked jerk chicken to the skillet and stir to incorporate with the fried rice. Cook for an additional 2-3 minutes to heat everything through.
  7. Season with salt and pepper to taste. Serve the jerk chicken fried rice hot and enjoy!
