Jerk Chicken Nachos With Mango Salsa

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into small pieces
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 bag of tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, toss the chicken pieces with the jerk seasoning and olive oil until well coated.
  3. Heat a skillet over medium-high heat and cook the seasoned chicken for 5-7 minutes, or until fully cooked.
