Ingredients
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 2 tbsp jerk seasoning
- 1 tbsp olive oil
- 1 bag of tortilla chips
- 1 cup shredded cheddar cheese
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, toss the chicken pieces with the jerk seasoning and olive oil until well coated.
- Heat a skillet over medium-high heat and cook the seasoned chicken for 5-7 minutes, or until fully cooked.

- Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
- In a separate bowl, combine the diced mango, red onion, cilantro, jalapeno, lime juice, and salt to make the mango salsa.
