Jerk Chicken Pasta

Ingredients
- 8 oz penne pasta
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 tbsp jerk seasoning
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the penne pasta according to package instructions. Drain and set aside.
- In a bowl, toss the chicken strips with jerk seasoning until well coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion, bell pepper, and garlic. Sauté until the vegetables are tender.
- Pour in the coconut milk and chicken broth, then bring to a simmer.
- Return the cooked chicken to the skillet and stir to combine. Season with salt and pepper to taste.
- Add the cooked penne pasta to the skillet and toss to coat with the jerk chicken and vegetable mixture.
- Remove from heat and serve hot.
