Jerk Chicken Pasta

Ingredients

  • 8 oz penne pasta
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 2 tbsp jerk seasoning
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the penne pasta according to package instructions. Drain and set aside.
  2. In a bowl, toss the chicken strips with jerk seasoning until well coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced onion, bell pepper, and garlic. Sauté until the vegetables are tender.
  5. Pour in the coconut milk and chicken broth, then bring to a simmer.
  6. Return the cooked chicken to the skillet and stir to combine. Season with salt and pepper to taste.
  7. Add the cooked penne pasta to the skillet and toss to coat with the jerk chicken and vegetable mixture.
  8. Remove from heat and serve hot.
