Ingredients
- 1 lb boneless, skinless chicken thighs, cut into strips
- 3 tbsp jerk seasoning
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup sliced avocado
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- In a bowl, toss the chicken strips with the jerk seasoning until well coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until fully cooked and slightly charred. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion and bell pepper. Cook for 3-4 minutes, or until softened and slightly caramelized.
- Warm the tortillas in a dry skillet or over an open flame until soft and pliable.
- Assemble the tacos by filling each tortilla with the jerk chicken, sautéed onions and peppers, shredded lettuce, diced tomatoes, sliced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.
- Serve the jerk chicken tacos with lime wedges on the side for squeezing over the tacos.
