Jerk Chicken Tacos (jerk Chicken Tacos)

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into strips
  • 3 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced avocado
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss the chicken strips with the jerk seasoning until well coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until fully cooked and slightly charred. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced onion and bell pepper. Cook for 3-4 minutes, or until softened and slightly caramelized.
  4. Warm the tortillas in a dry skillet or over an open flame until soft and pliable.
  5. Assemble the tacos by filling each tortilla with the jerk chicken, sautéed onions and peppers, shredded lettuce, diced tomatoes, sliced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.
  6. Serve the jerk chicken tacos with lime wedges on the side for squeezing over the tacos.
