Jersey Jambalaya

Ingredients
- 1 lb Andouille sausage, sliced
- 1 lb chicken breast, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 3 cups chicken broth
- 1 cup long grain rice
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the Andouille sausage over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onion, bell pepper, celery, and garlic, cooking until the vegetables are softened.
- Add the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, and oregano. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the jambalaya with a fork and serve hot.
