Jersey Jambalaya

Ingredients

  • 1 lb Andouille sausage, sliced
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups chicken broth
  • 1 cup long grain rice
  • 2 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the Andouille sausage over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion, bell pepper, celery, and garlic, cooking until the vegetables are softened.
  4. Add the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, and oregano. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the jambalaya with a fork and serve hot.
