Ingredients
- 2 large eggplants, cut into cubes
- 2 onions, finely chopped
- 2 tomatoes, diced
- 3-4 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute.
- Add turmeric, red chili, and coriander powders. Mix well.
- Add diced tomatoes and cook until they turn mushy.
- Add the cubed eggplants and mix well. Cook covered until the eggplants are tender.
- Add garam masala and salt. Mix and cook for a few more minutes.
- Garnish with fresh cilantro and serve hot with rice or roti.
