Ingredients

  • 2 large eggplants, cut into cubes
  • 2 onions, finely chopped
  • 2 tomatoes, diced
  • 3-4 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for a minute.
  4. Add turmeric, red chili, and coriander powders. Mix well.
  5. Add diced tomatoes and cook until they turn mushy.
  6. Add the cubed eggplants and mix well. Cook covered until the eggplants are tender.
  7. Add garam masala and salt. Mix and cook for a few more minutes.
  8. Garnish with fresh cilantro and serve hot with rice or roti.
