Jharkhandi Lamb Pilaf (jharkhandi Mutton Biryani)
Jharkhandi Lamb Pilaf, also known as Jharkhandi Mutton Biryani, is a traditional dish from the Jharkhandi Cuisine. This aromatic and flavorful pilaf is made with tender pieces of lamb, fragrant spices, and long-grain basmati rice.
Ingredients
- 500g lamb, cut into pieces
- 2 cups basmati rice
- 4 onions, thinly sliced
- 1/2 cup yogurt
- 4 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 1/4 cup ghee
- 1/4 cup vegetable oil
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 2 bay leaves
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat ghee and oil in a large pot. Add the cinnamon stick, cardamom pods, cloves, bay leaves, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste and cook for 2 minutes.
- Add the lamb pieces and cook until browned.
- Stir in the chopped tomatoes, yogurt, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes.
- Add the soaked basmati rice and water. Bring to a boil, then reduce the heat to low. Cover and cook for 20 minutes, or until the rice and lamb are tender.
- Fluff the pilaf with a fork and serve hot.
