Ingredients
- 2 cups yogurt
- 1/2 cup besan (gram flour)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1/2 inch ginger, grated
- 1 green chili, finely chopped
- 1/4 cup chopped cilantro
- 4 cups water
- Salt to taste
- Oil for frying
- 1 onion, thinly sliced
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- 8-10 curry leaves
Instructions
- In a bowl, whisk together yogurt, besan, turmeric powder, red chili powder, cumin seeds, ginger, green chili, cilantro, and water to make a smooth mixture.
- Heat oil in a pan for frying. Drop spoonfuls of the besan mixture into the hot oil and fry until golden brown. Remove and drain on a paper towel.
- In a large pot, heat 1 tbsp oil. Add mustard seeds, fenugreek seeds, and curry leaves. Sauté until the seeds crackle.
- Add the sliced onion and sauté until golden brown.
- Pour the yogurt mixture into the pot and bring to a gentle boil. Simmer for 15-20 minutes, stirring occasionally.
- Add the fried fritters to the soup and simmer for another 5 minutes.
- Adjust the seasoning and consistency as needed. Serve hot with steamed rice or roti.
