Ingredients

  • 2 cups yogurt
  • 1/2 cup besan (gram flour)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1/2 inch ginger, grated
  • 1 green chili, finely chopped
  • 1/4 cup chopped cilantro
  • 4 cups water
  • Salt to taste
  • Oil for frying
  • 1 onion, thinly sliced
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 8-10 curry leaves

Instructions

  1. In a bowl, whisk together yogurt, besan, turmeric powder, red chili powder, cumin seeds, ginger, green chili, cilantro, and water to make a smooth mixture.
  2. Heat oil in a pan for frying. Drop spoonfuls of the besan mixture into the hot oil and fry until golden brown. Remove and drain on a paper towel.
  3. In a large pot, heat 1 tbsp oil. Add mustard seeds, fenugreek seeds, and curry leaves. Sauté until the seeds crackle.
  4. Add the sliced onion and sauté until golden brown.
  5. Pour the yogurt mixture into the pot and bring to a gentle boil. Simmer for 15-20 minutes, stirring occasionally.
  6. Add the fried fritters to the soup and simmer for another 5 minutes.
  7. Adjust the seasoning and consistency as needed. Serve hot with steamed rice or roti.
