Jiang Ji (fragrant Manchu Ginger Chicken)
Jiang Ji, also known as Fragrant Manchu Ginger Chicken, is a traditional dish from Manchu Cuisine that features tender chicken infused with the aromatic flavors of ginger and other spices.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- 2 green onions, thinly sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix together soy sauce, rice vinegar, honey, garlic, ginger, sesame oil, and red pepper flakes to create the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
- Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, and season with salt and pepper.
- Place the chicken in the skillet, skin side down, and cook for 6-7 minutes until golden brown and crispy. Flip the chicken and continue cooking for another 6-7 minutes until fully cooked.
- Pour the remaining marinade into the skillet and simmer for 2-3 minutes until the sauce thickens slightly.
- Sprinkle green onions over the chicken and serve hot.
