Jiangxi-Style Steamed Fish (江西蒸鱼)

Ingredients

  • 1 whole fresh fish (such as sea bass or tilapia), cleaned and scaled
  • 3 slices ginger
  • 2 green onions, cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons hot water

Instructions

  1. Place the fish on a heatproof plate and make 2-3 diagonal cuts on each side of the fish.
  2. Place the ginger and green onions on top of the fish.
  3. In a small bowl, mix together the soy sauce, Shaoxing wine, sesame oil, sugar, salt, and white pepper. Pour this mixture over the fish.
  4. Place the plate in a steamer and steam over high heat for 15-20 minutes, or until the fish is cooked through.
  5. Remove the plate from the steamer and pour the hot water over the fish.
  6. Garnish with additional green onions, if desired, and serve hot.
