Jiao Hua Yang (beggar's Lamb)
Jiao Hua Yang, also known as Beggar's Lamb, is a traditional dish from Zhejiang Cuisine that features tender lamb cooked with a flavorful sauce. This dish is perfect for a special occasion or a hearty family meal.
Ingredients
- 1.5 lbs (700g) lamb, cut into chunks
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 inch (2.5cm) ginger, grated
- 2 green onions, chopped
- 1/4 cup (60ml) soy sauce
- 2 tbsp Shaoxing wine
- 1 tbsp sugar
- 1/2 cup (120ml) water
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb and cook until browned on all sides.
- Add the garlic, ginger, and green onions to the pot. Cook for 2-3 minutes until fragrant.
- Pour in the soy sauce, Shaoxing wine, sugar, and water. Season with salt and pepper. Stir to combine.
- Cover the pot and simmer for 1 hour, or until the lamb is tender.
- Once the lamb is cooked, uncover the pot and let the sauce thicken for a few minutes.
- Serve the Jiao Hua Yang hot, garnished with additional green onions if desired.
