Jiao Hua Yang (beggar's Lamb)

Ingredients

  • 1.5 lbs (700g) lamb, cut into chunks
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch (2.5cm) ginger, grated
  • 2 green onions, chopped
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1/2 cup (120ml) water
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the lamb and cook until browned on all sides.
  2. Add the garlic, ginger, and green onions to the pot. Cook for 2-3 minutes until fragrant.
  3. Pour in the soy sauce, Shaoxing wine, sugar, and water. Season with salt and pepper. Stir to combine.
  4. Cover the pot and simmer for 1 hour, or until the lamb is tender.
  5. Once the lamb is cooked, uncover the pot and let the sauce thicken for a few minutes.
  6. Serve the Jiao Hua Yang hot, garnished with additional green onions if desired.
