Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1 cup cooked and shredded chicken (optional for non-vegetarian version)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 cups vegetable oil for frying

Instructions

  1. In a large bowl, mix together the cabbage, carrots, bean sprouts, and chicken (if using).
  2. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, garlic, ginger, sugar, and black pepper. Pour this sauce over the vegetable and chicken mixture, and toss to combine.
  3. Place a spring roll wrapper on a clean and dry surface, with one corner pointing towards you. Spoon about 2-3 tablespoons of the filling onto the bottom third of the wrapper. Fold the bottom corner over the filling, then fold in the left and right corners. Roll the spring roll up tightly, and seal the top corner with a dab of water.
  4. Heat the vegetable oil in a large pan over medium heat. Fry the spring rolls in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
  5. Serve the Jin Feng Chun Juan hot with your favorite dipping sauce.
