Jin Ji Chao (golden Pheasant Stir-fry)

Ingredients

  • 2 pheasant breasts, thinly sliced
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 cup snow peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the sliced pheasant breasts with soy sauce, Shaoxing wine, and sugar for 15 minutes.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add the marinated pheasant and stir-fry until cooked through. Remove from the wok and set aside.
  3. In the same wok, add a bit more oil if needed. Stir-fry the garlic, ginger, and vegetables until they are tender-crisp.
  4. Return the cooked pheasant to the wok, add oyster sauce and sesame oil, and toss everything together until well combined.
  5. Season with salt and pepper to taste. Serve the Golden Pheasant Stir-Fry hot with steamed rice.
