Jjajangmyeon (짜장면)

Ingredients

  • 1/2 cup black bean paste
  • 2 tbsp vegetable oil
  • 1/2 lb pork, diced
  • 1/2 cup onion, diced
  • 1/2 cup zucchini, diced
  • 1/2 cup potato, diced
  • 1 1/2 cups water
  • 2 tbsp cornstarch mixed with 3 tbsp water
  • 4 servings of fresh or dried noodles

Instructions

  1. Heat the vegetable oil in a large wok or skillet over medium heat.
  2. Add the diced pork and stir-fry until cooked through.
  3. Add the onion, zucchini, and potato, and continue to stir-fry until the vegetables are tender.
  4. Stir in the black bean paste and water, and bring the mixture to a simmer.
  5. Gradually stir in the cornstarch mixture to thicken the sauce.
  6. Cook the noodles according to the package instructions, then drain and divide among serving bowls.
  7. Ladle the black bean sauce over the noodles and serve hot.
