Ingredients

  • 1 package of fresh or dried jjajangmyeon noodles
  • 1 cup of diced pork or tofu for vegetarian option
  • 1/2 cup of diced onion
  • 1/2 cup of diced zucchini
  • 1/2 cup of diced potato
  • 1/4 cup of black bean paste
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cups of chicken or vegetable broth

Instructions

  1. Boil the jjajangmyeon noodles according to the package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced pork or tofu and cook until browned.
  3. Add the diced onion, zucchini, and potato to the skillet and cook until the vegetables are slightly softened.
  4. Stir in the black bean paste, sugar, salt, and black pepper, and cook for 2-3 minutes.
  5. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cook for an additional 5-7 minutes, or until the sauce has thickened.
