Ingredients
- 1 package of fresh or dried jjajangmyeon noodles
- 1 cup of diced pork or tofu for vegetarian option
- 1/2 cup of diced onion
- 1/2 cup of diced zucchini
- 1/2 cup of diced potato
- 1/4 cup of black bean paste
- 1 tablespoon of vegetable oil
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 cups of chicken or vegetable broth
Instructions
- Boil the jjajangmyeon noodles according to the package instructions, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced pork or tofu and cook until browned.
- Add the diced onion, zucchini, and potato to the skillet and cook until the vegetables are slightly softened.
- Stir in the black bean paste, sugar, salt, and black pepper, and cook for 2-3 minutes.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cook for an additional 5-7 minutes, or until the sauce has thickened.
- Divide the cooked noodles among serving bowls and top with the black bean sauce. Serve hot and enjoy!
