Jjamppong (짬뽕) Ramen
Jjamppong (짬뽕) is a popular Korean Chinese noodle soup known for its spicy and savory flavors. This recipe combines the rich flavors of Jjamppong with the convenience of ramen noodles, making it a quick and satisfying meal.
Ingredients
- 2 packs of ramen noodles
- 4 cups of chicken or seafood broth
- 1/2 cup of sliced onions
- 1/2 cup of sliced carrots
- 1/2 cup of sliced cabbage
- 1/2 cup of sliced zucchini
- 1/2 cup of sliced mushrooms
- 1/2 cup of baby spinach
- 1/2 pound of mixed seafood (shrimp, squid, mussels)
- 2 tablespoons of Korean chili flakes (gochugaru)
- 2 tablespoons of Korean chili paste (gochujang)
- 2 tablespoons of soy sauce
- 2 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and Korean chili flakes, and stir-fry for 1 minute.
- Pour in the chicken or seafood broth and bring it to a boil.
- Add the sliced onions, carrots, cabbage, zucchini, and mushrooms to the pot. Simmer for 5 minutes.
- Stir in the Korean chili paste, soy sauce, and mixed seafood. Cook for an additional 5 minutes.
- Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
- Once the seafood is cooked through, add the baby spinach to the pot and cook for 1 minute until wilted.
- Divide the cooked ramen noodles into serving bowls and ladle the Jjamppong soup over the noodles.
- Season with salt and pepper to taste, and serve hot.
