Ingredients
- 1/2 pound udon noodles
- 8 cups chicken or seafood broth
- 1/2 pound mixed seafood (shrimp, mussels, squid)
- 1/2 cup sliced carrots
- 1/2 cup sliced onions
- 1/4 cup sliced scallions
- 3 tablespoons Korean chili paste (Gochujang)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 1 teaspoon sugar
Instructions
- Boil the udon noodles according to the package instructions, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat and sauté the garlic, onions, and carrots until they begin to soften.
- Add the seafood and continue to stir-fry for 2-3 minutes.
- Pour in the chicken or seafood broth and bring to a boil.
- Stir in the Korean chili paste, soy sauce, and sugar, then reduce the heat and let the broth simmer for 10 minutes.
- Add the cooked udon noodles to the broth and simmer for an additional 2-3 minutes.
- Garnish with sliced scallions and serve hot.
