Ingredients

  • 1/2 pound udon noodles

  • 1/2 cup sliced onions
  • 1/4 cup sliced scallions
  • 3 tablespoons Korean chili paste (Gochujang)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 teaspoon sugar

Instructions

  1. Boil the udon noodles according to the package instructions, then drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat and sauté the garlic, onions, and carrots until they begin to soften.
  3. Add the seafood and continue to stir-fry for 2-3 minutes.
  4. Pour in the chicken or seafood broth and bring to a boil.
  5. Stir in the Korean chili paste, soy sauce, and sugar, then reduce the heat and let the broth simmer for 10 minutes.
  6. Add the cooked udon noodles to the broth and simmer for an additional 2-3 minutes.
  7. Garnish with sliced scallions and serve hot.
