Jjimdak Braised Chicken with Vegetables (찜닭)

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 large potato, cut into chunks
  • 1 large carrot, sliced
  • 1 small onion, sliced
  • 4-5 shiitake mushrooms, sliced
  • 4 garlic cloves, minced
  • 2 green onions, cut into 2-inch pieces
  • 1 cup water
  • 2 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp cooking oil
  • 1 tsp gochugaru (Korean red pepper flakes)

Instructions

  1. Heat cooking oil in a large pot over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken and set aside.
  2. In the same pot, add the garlic, onion, and mushrooms. Sauté until the vegetables are slightly softened.
  3. Add the potatoes, carrots, and green onions to the pot.
  4. Place the browned chicken back into the pot.
  5. In a bowl, mix water, soy sauce, sugar, sesame oil, and gochugaru. Pour the mixture over the chicken and vegetables.
  6. Cover the pot and simmer for about 40-45 minutes, or until the chicken is fully cooked and the vegetables are tender.
  7. Once done, uncover the pot and let the sauce thicken for a few more minutes.
  8. Serve the Jjimdak hot with steamed rice.
