Jjimdak Braised Chicken with Vegetables (찜닭)
찜닭 (Jjimdak) is a popular Korean braised chicken dish that is packed with savory and slightly sweet flavors. This dish is perfect for a comforting and satisfying meal, and it's great for sharing with family and friends.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 large potato, cut into chunks
- 1 large carrot, sliced
- 1 small onion, sliced
- 4-5 shiitake mushrooms, sliced
- 4 garlic cloves, minced
- 2 green onions, cut into 2-inch pieces
- 1 cup water
- 2 tbsp soy sauce
- 2 tbsp sugar
- 1 tbsp sesame oil
- 1 tbsp cooking oil
- 1 tsp gochugaru (Korean red pepper flakes)
Instructions
- Heat cooking oil in a large pot over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken and set aside.
- In the same pot, add the garlic, onion, and mushrooms. Sauté until the vegetables are slightly softened.
- Add the potatoes, carrots, and green onions to the pot.
- Place the browned chicken back into the pot.
- In a bowl, mix water, soy sauce, sugar, sesame oil, and gochugaru. Pour the mixture over the chicken and vegetables.
- Cover the pot and simmer for about 40-45 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Once done, uncover the pot and let the sauce thicken for a few more minutes.
- Serve the Jjimdak hot with steamed rice.
