Jjimdak Soy-Braised Chicken (찜닭)
찜닭 (Jjimdak) is a popular Korean braised chicken dish that is savory, slightly sweet, and packed with flavor. It's a comforting and hearty dish that is perfect for sharing with family and friends.
Ingredients
- 4 chicken drumsticks
- 4 chicken thighs
- 1 large potato, cut into chunks
- 1 large carrot, sliced
- 1 onion, sliced
- 4 green onions, cut into 2-inch pieces
- 5 dried shiitake mushrooms, rehydrated and sliced
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1 tablespoon cooking oil
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (gochugaru)
- 2 cups water
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the chicken pieces and cook until browned on all sides.
- Add the garlic, onion, and shiitake mushrooms to the pot. Cook for 2-3 minutes until fragrant.
- Stir in the soy sauce, sugar, sesame oil, black pepper, and red pepper flakes. Cook for another 2 minutes.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- Add the potato, carrot, and green onions to the pot. Continue to simmer, covered, for an additional 15-20 minutes until the chicken and vegetables are tender.
- Once the chicken and vegetables are cooked through, remove from heat and serve hot.
