Jocón Beef (Carne Jocón)
Carne Jocón, also known as Jocón Beef, is a traditional Guatemalan dish that features tender beef cooked in a flavorful and vibrant green sauce made with tomatillos, cilantro, and other aromatic ingredients. Ingredients
- 2 lbs beef, cut into chunks
- 1 onion, chopped
- 4 tomatillos, husked and rinsed
- 1 bunch cilantro
- 4 garlic cloves
- 1 green bell pepper, chopped
- 1 jalapeño pepper, seeded and chopped
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 cups chicken or beef broth
- 2 tbsp vegetable oil
Instructions
- Season the beef chunks with salt and pepper.
- In a blender, combine the tomatillos, cilantro, garlic, green bell pepper, jalapeño, cumin, and oregano. Blend until smooth.
- Heat the vegetable oil in a large pot over medium-high heat. Add the seasoned beef and chopped onion. Cook until the beef is browned on all sides.
- Pour the blended green sauce over the beef and add the broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour or until the beef is tender.
- Once the beef is tender, adjust the seasoning with salt and pepper if needed.
- Serve the Carne Jocón hot, accompanied by rice and tortillas.
