Jocón Beef (Carne Jocón)

Ingredients

  • 2 lbs beef, cut into chunks
  • 1 onion, chopped
  • 4 tomatillos, husked and rinsed
  • 1 bunch cilantro
  • 4 garlic cloves
  • 1 green bell pepper, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • 2 tbsp vegetable oil

Instructions

  1. Season the beef chunks with salt and pepper.
  2. In a blender, combine the tomatillos, cilantro, garlic, green bell pepper, jalapeño, cumin, and oregano. Blend until smooth.
  3. Heat the vegetable oil in a large pot over medium-high heat. Add the seasoned beef and chopped onion. Cook until the beef is browned on all sides.
  4. Pour the blended green sauce over the beef and add the broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour or until the beef is tender.
  5. Once the beef is tender, adjust the seasoning with salt and pepper if needed.
  6. Serve the Carne Jocón hot, accompanied by rice and tortillas.
