Jocón Chicken (Pollo Jocón)

Ingredients

  • 3 lbs chicken, cut into pieces
  • 1 cup tomatillos, husked and washed
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 bunch fresh cilantro
  • 1 bunch fresh parsley
  • 1 green bell pepper, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup corn tortillas, torn into pieces
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine tomatillos, onion, garlic, cilantro, parsley, green bell pepper, jalapeño pepper, pumpkin seeds, and torn corn tortillas.
  2. Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  3. Using a blender, puree the mixture until smooth.
  4. Season the chicken pieces with salt and pepper, then add them to the pot with the green sauce.
  5. Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
  6. Serve the Pollo Jocón with rice and enjoy!
