Jocón Chicken (Pollo Jocón)
Pollo Jocón, also known as Jocón Chicken, is a traditional Guatemalan dish with a rich and flavorful green sauce. This dish is a perfect combination of tender chicken and a vibrant, herbaceous sauce that is sure to delight your taste buds.
Ingredients
- 3 lbs chicken, cut into pieces
- 1 cup tomatillos, husked and washed
- 1 onion, chopped
- 3 cloves garlic
- 1 bunch fresh cilantro
- 1 bunch fresh parsley
- 1 green bell pepper, chopped
- 1 jalapeño pepper, seeded and chopped
- 1/2 cup pumpkin seeds
- 1/2 cup corn tortillas, torn into pieces
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, combine tomatillos, onion, garlic, cilantro, parsley, green bell pepper, jalapeño pepper, pumpkin seeds, and torn corn tortillas.
- Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Using a blender, puree the mixture until smooth.
- Season the chicken pieces with salt and pepper, then add them to the pot with the green sauce.
- Cover and simmer for 45 minutes, or until the chicken is cooked through and tender.
- Serve the Pollo Jocón with rice and enjoy!
