Jollof Fusion (Ivorian-style jollof rice with a twist)

Ingredients

  • 2 cups of long-grain parboiled rice
  • 1 pound of chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 tomatoes, blended
  • 1 bell pepper, diced
  • 1 scotch bonnet pepper, chopped
  • 1/4 cup of vegetable oil
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 cups of chicken broth

Instructions

  1. Season the chicken with salt, pepper, and half of the curry powder.
  2. Heat the vegetable oil in a large pot over medium heat and brown the chicken pieces. Remove and set aside.
  3. In the same pot, sauté the onions, bell pepper, and scotch bonnet pepper until softened.
  4. Add the blended tomatoes, remaining curry powder, thyme, and paprika. Cook for about 10 minutes, stirring occasionally.
  5. Stir in the rice and chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Return the browned chicken pieces to the pot and gently mix with the rice. Cover and let it simmer for an additional 5 minutes.
  7. Fluff the rice with a fork and serve hot.
