Jollof Rice Delight
Jollof Rice Delight is a popular dish in Sierra Leone, known for its flavorful and aromatic rice cooked in a rich tomato-based sauce.
Ingredients
- 2 cups long-grain rice
- 1 onion, finely chopped
- 3 tomatoes, blended
- 1 red bell pepper, diced
- 1 scotch bonnet pepper, chopped
- 1/4 cup vegetable oil
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 2 cups chicken or vegetable broth
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the blended tomatoes, diced bell pepper, and scotch bonnet pepper. Cook for 10 minutes, stirring occasionally.
- Stir in the thyme, curry powder, and salt. Cook for another 5 minutes.
- Add the rice to the pot and stir to coat it with the tomato mixture.
- Pour in the broth, stir, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
