Jollof Rice Delight

Ingredients

  • 2 cups long-grain rice
  • 1 onion, finely chopped
  • 3 tomatoes, blended
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, chopped
  • 1/4 cup vegetable oil
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2 cups chicken or vegetable broth
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the blended tomatoes, diced bell pepper, and scotch bonnet pepper. Cook for 10 minutes, stirring occasionally.
  4. Stir in the thyme, curry powder, and salt. Cook for another 5 minutes.
  5. Add the rice to the pot and stir to coat it with the tomato mixture.
  6. Pour in the broth, stir, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and serve hot.
