Ingredients

  • 3 cups of long-grain parboiled rice
  • 1/4 cup of vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne pepper
  • 1 can (14 oz) of diced tomatoes
  • 2 cups of vegetable broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup of frozen mixed vegetables
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Stir in the ground ginger, paprika, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
  3. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Stir in the rice, diced red and green bell peppers, and frozen mixed vegetables. Season with salt and pepper.
  6. Reduce the heat to low, cover the pot, and let the Jollof rice simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and serve hot.
