Ingredients
- 3 cups of long-grain parboiled rice
- 1/4 cup of vegetable oil
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 1 can (14 oz) of diced tomatoes
- 2 cups of vegetable broth
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup of frozen mixed vegetables
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the ground ginger, paprika, and cayenne pepper, and cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil.
- Stir in the rice, diced red and green bell peppers, and frozen mixed vegetables. Season with salt and pepper.
- Reduce the heat to low, cover the pot, and let the Jollof rice simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
