Ingredients

  • 3 cups long-grain white rice
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and diced red bell pepper. Sauté until the vegetables are soft.
  3. Stir in the crushed tomatoes, chicken or vegetable broth, thyme, curry powder, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then add the rice. Stir well to combine.
  5. Reduce the heat to low, cover the pot, and let the rice simmer for 25-30 minutes, or until the liquid is absorbed and the rice is tender.
  6. Fluff the rice with a fork and serve hot.
