Jollof Rice (jollof Rice Explosion)

Ingredients
- 3 cups long-grain white rice
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 can (14 oz) crushed tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and diced red bell pepper. Sauté until the vegetables are soft.
- Stir in the crushed tomatoes, chicken or vegetable broth, thyme, curry powder, paprika, salt, and pepper.
- Bring the mixture to a boil, then add the rice. Stir well to combine.
- Reduce the heat to low, cover the pot, and let the rice simmer for 25-30 minutes, or until the liquid is absorbed and the rice is tender.
- Fluff the rice with a fork and serve hot.
