Ingredients

  • 2 cups of long-grain rice

  • 3 tomatoes, blended
  • 1 red bell pepper, blended
  • 1 scotch bonnet pepper, chopped
  • 1 cup of smoked fish, flaked
  • 1/4 cup of vegetable oil
  • 2 cups of chicken or fish stock
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • Salt and pepper to taste

Instructions

  1. Wash the rice and set aside.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the chopped onions and sauté until translucent.
  4. Stir in the blended tomatoes, red bell pepper, and scotch bonnet pepper. Cook for 10 minutes, stirring occasionally.
  5. Add the flaked smoked fish and cook for an additional 5 minutes.
  6. Stir in the rice, thyme, curry powder, salt, and pepper. Cook for 2 minutes, stirring constantly.
  7. Pour in the chicken or fish stock, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork and serve hot.
