Jollof Rice with Smoked Fish (Riz au Jollof avec Poisson Fumé)

Ingredients
- 2 cups of long-grain rice
- 1 onion, finely chopped
- 3 tomatoes, blended
- 1 red bell pepper, blended
- 1 scotch bonnet pepper, finely chopped
- 1 cup of smoked fish, flaked
- 2 tablespoons of tomato paste
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- 4 cups of chicken or vegetable broth
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Instructions
- Wash the rice and set aside.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the blended tomatoes, red bell pepper, and scotch bonnet pepper. Cook for 10 minutes, stirring occasionally.
- Add the tomato paste, thyme, curry powder, paprika, salt, and pepper. Cook for another 5 minutes.
- Pour in the chicken or vegetable broth and bring to a boil.
- Stir in the washed rice and reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Gently fold in the flaked smoked fish, then cover and let it sit for 5 minutes.
- Fluff the rice with a fork and serve hot.
