Jollof Rice with Smoked Fish (Riz Jollof avec Poisson Fumé)

Ingredients

  • 2 cups of long-grain parboiled rice
  • 1 pound of smoked fish, deboned and flaked
  • 1 onion, finely chopped
  • 3 ripe tomatoes, blended
  • 1 red bell pepper, blended
  • 1 green bell pepper, finely chopped
  • 1/4 cup of vegetable oil
  • 2 cups of chicken or fish stock
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the blended tomatoes and bell peppers, and cook for 10 minutes, stirring occasionally.
  4. Add the thyme, curry powder, paprika, salt, and pepper. Stir well to combine.
  5. Pour in the stock and bring the mixture to a boil.
  6. Stir in the rice, reduce the heat to low, cover the pot, and simmer for 20 minutes.
  7. Gently fold in the flaked smoked fish and chopped green bell pepper.
  8. Cover the pot and cook for an additional 10-15 minutes until the rice is tender and the fish is heated through.
  9. Fluff the rice with a fork and serve hot.
