Jollof Spaghetti With Chicken
Jollof Spaghetti with Chicken is a popular dish in Sierra Leone, known for its flavorful combination of spices and tender chicken.
Ingredients
- 1 lb spaghetti
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup tomato sauce
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions, garlic, and bell pepper until softened.
- Add the tomato sauce, chicken broth, curry powder, thyme, paprika, salt, and pepper. Stir to combine.
- Return the chicken to the pot, cover, and simmer for 20 minutes.
- Cook the spaghetti according to the package instructions. Drain and add to the pot with the chicken and sauce. Toss to combine.
