Ingredients

  • 1 lb spaghetti
  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned. Remove the chicken from the pot and set aside.
  2. In the same pot, sauté the onions, garlic, and bell pepper until softened.
  3. Add the tomato sauce, chicken broth, curry powder, thyme, paprika, salt, and pepper. Stir to combine.
  4. Return the chicken to the pot, cover, and simmer for 20 minutes.
  5. Cook the spaghetti according to the package instructions. Drain and add to the pot with the chicken and sauce. Toss to combine.
