Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups cooked Ivorian-style jollof rice

- 1 teaspoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the cooked jollof rice, onion, tomatoes, bell pepper, garlic, thyme, curry powder, paprika, salt, and pepper. Mix well to combine.
- Place each chicken breast between two sheets of plastic wrap and pound to an even thickness.
- Spoon the jollof rice mixture onto the center of each chicken breast.
- Roll up the chicken breasts, tucking in the sides, and secure with toothpicks.
- Heat the vegetable oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts until golden brown on all sides, about 3 minutes per side.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove the toothpicks and slice the stuffed chicken breasts before serving.
