Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cooked Ivorian-style jollof rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked jollof rice, onion, tomatoes, bell pepper, garlic, thyme, curry powder, paprika, salt, and pepper. Mix well to combine.
  3. Place each chicken breast between two sheets of plastic wrap and pound to an even thickness.

  5. Roll up the chicken breasts, tucking in the sides, and secure with toothpicks.
