Ingredients
- 4 large bell peppers
- 2 cups of cooked jollof rice
- 1 onion, finely chopped
- 1 tomato, diced
- 1/2 cup of tomato sauce
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- Salt and pepper to taste
- 1/4 cup of vegetable oil
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix the cooked jollof rice, chopped onion, diced tomato, tomato sauce, thyme, curry powder, salt, and pepper.
- Stuff the bell peppers with the jollof rice mixture and place them in a baking dish.
- Drizzle the stuffed peppers with vegetable oil and cover the dish with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.
