Ingredients

  • 4 large bell peppers
  • 2 cups of cooked jollof rice
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/2 cup of tomato sauce
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • Salt and pepper to taste
  • 1/4 cup of vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix the cooked jollof rice, chopped onion, diced tomato, tomato sauce, thyme, curry powder, salt, and pepper.
  4. Stuff the bell peppers with the jollof rice mixture and place them in a baking dish.
  5. Drizzle the stuffed peppers with vegetable oil and cover the dish with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.
