Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup plain yogurt
- 3 cloves garlic, minced
- 1 teaspoon ground saffron (dissolved in 2 tablespoons hot water)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, cut into wedges
Instructions
- In a large bowl, combine the yogurt, minced garlic, saffron water, olive oil, lemon juice, salt, and black pepper. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the stovetop grill or a large skillet over medium-high heat. Thread the marinated chicken cubes onto skewers, alternating with the onion wedges.
- Grill the skewers for about 6-8 minutes on each side, or until the chicken is fully cooked and has a nice char on the outside.
- Once cooked, remove the skewers from the heat and let them rest for a few minutes before serving.
