Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup plain yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon saffron threads, dissolved in 2 tablespoons hot water
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine the yogurt, olive oil, lemon juice, saffron water, garlic, salt, and black pepper. Mix well.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
