Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup plain yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon saffron threads, dissolved in 2 tablespoons hot water
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the yogurt, olive oil, lemon juice, saffron water, garlic, salt, and black pepper. Mix well.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
  5. Remove the skewers from the grill and let them rest for a few minutes before serving.
