Ingredients
- 1 cup dried chickpeas, soaked overnight
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- Salt and pepper to taste
- Vegetable oil for frying
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup tahini dressing
Instructions
- In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is finely ground but not pureed.
- Transfer the falafel mixture to a bowl and refrigerate for 15 minutes.
- Form the mixture into small balls and flatten slightly to form patties.
- Heat vegetable oil in a pan over medium heat and fry the falafel patties until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, and mint leaves.
- Divide the salad mixture among serving plates, top with the falafel patties, and sprinkle with crumbled feta cheese if desired.
- Drizzle with tahini dressing and serve immediately.
