Jordanian Falafel Salad (سلطة فلافل أردنية)

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup tahini dressing

Instructions

  1. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is finely ground but not pureed.
  2. Transfer the falafel mixture to a bowl and refrigerate for 15 minutes.
  3. Form the mixture into small balls and flatten slightly to form patties.
  4. Heat vegetable oil in a pan over medium heat and fry the falafel patties until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  5. In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, and mint leaves.
  6. Divide the salad mixture among serving plates, top with the falafel patties, and sprinkle with crumbled feta cheese if desired.
  7. Drizzle with tahini dressing and serve immediately.
