Jordanian Maftoul Salad With Herbed Couscous And Vegetables

Ingredients

  • 1 cup maftoul
  • 1 cup couscous
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring 4 cups of water to a boil. Add the maftoul and cook for 10 minutes. Drain and set aside.
  2. In a separate pot, bring 1 1/2 cups of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a large bowl, combine the cooked maftoul, couscous, cucumber, bell peppers, cherry tomatoes, parsley, and mint.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
