Jordanian Maftoul Salad With Herbed Couscous And Vegetables
This Jordanian Maftoul Salad with Herbed Couscous and Vegetables is a refreshing and flavorful dish that is perfect for a light lunch or as a side dish for a larger meal.
Ingredients
- 1 cup maftoul
- 1 cup couscous
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large pot, bring 4 cups of water to a boil. Add the maftoul and cook for 10 minutes. Drain and set aside.
- In a separate pot, bring 1 1/2 cups of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked maftoul, couscous, cucumber, bell peppers, cherry tomatoes, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
