Upside-Down Rice Dish, also known as Maqluba, is a traditional Jordanian dish that features layers of rice, vegetables, and meat, all cooked together and then flipped upside down for a stunning presentation.

Jordanian Maqluba (Upside-Down Rice Dish)

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 2 onions, sliced
  • 3 carrots, peeled and sliced
  • 1 eggplant, sliced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Start by cooking the chicken in a large pot until browned. Remove the chicken and set aside.
  2. In the same pot, sauté the onions, carrots, and eggplant until slightly softened.
  3. Add the spices and rice to the pot, then pour in enough water to cover the rice by about an inch. Season with salt and pepper.
  4. Place the browned chicken on top of the rice mixture.
  5. Cover the pot and let the dish simmer for about 30 minutes, or until the rice is cooked and the chicken is tender.
  6. Once done, carefully flip the pot onto a large serving platter, allowing the rice to form a beautiful upside-down dome with the chicken and vegetables on top.
