Jordanian Maqluba (Upside-Down Rice Dish)
Upside-Down Rice Dish, also known as Maqluba, is a traditional Jordanian dish that features layers of rice, vegetables, and meat, all cooked together and then flipped upside down for a stunning presentation.
Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 2 onions, sliced
- 3 carrots, peeled and sliced
- 1 eggplant, sliced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Start by cooking the chicken in a large pot until browned. Remove the chicken and set aside.
- In the same pot, sauté the onions, carrots, and eggplant until slightly softened.
- Add the spices and rice to the pot, then pour in enough water to cover the rice by about an inch. Season with salt and pepper.
- Place the browned chicken on top of the rice mixture.
- Cover the pot and let the dish simmer for about 30 minutes, or until the rice is cooked and the chicken is tender.
- Once done, carefully flip the pot onto a large serving platter, allowing the rice to form a beautiful upside-down dome with the chicken and vegetables on top.
