Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs, bone-in and skin-on
  • 1 large eggplant, sliced
  • 2 large carrots, peeled and sliced
  • 1 large onion, sliced
  • 1/2 cup cauliflower florets
  • 4 cups chicken broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, brown the chicken thighs on both sides. Remove and set aside.
  2. In the same pot, sauté the onions until translucent. Add the rice and spices, and stir to combine.
  3. Carefully arrange the browned chicken, eggplant, carrots, and cauliflower over the rice mixture.
  4. Pour the chicken broth over the ingredients. Cover and simmer for 30 minutes, or until the rice is cooked and the chicken is tender.
  5. Once cooked, carefully invert the pot onto a large serving platter, allowing the rice to form the top layer.
  6. Garnish with chopped parsley and serve hot.
