Jordanian Maqluba (upside-down Rice) With Chicken And Vegetables
Jordanian Maqluba, also known as Upside-Down Rice, is a traditional Middle Eastern dish that features layers of spiced rice, tender chicken, and a variety of vegetables. This flavorful one-pot meal is perfect for gatherings and special occasions.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs, bone-in and skin-on
- 1 large eggplant, sliced
- 2 large carrots, peeled and sliced
- 1 large onion, sliced
- 1/2 cup cauliflower florets
- 4 cups chicken broth
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, brown the chicken thighs on both sides. Remove and set aside.
- In the same pot, sauté the onions until translucent. Add the rice and spices, and stir to combine.
- Carefully arrange the browned chicken, eggplant, carrots, and cauliflower over the rice mixture.
- Pour the chicken broth over the ingredients. Cover and simmer for 30 minutes, or until the rice is cooked and the chicken is tender.
- Once cooked, carefully invert the pot onto a large serving platter, allowing the rice to form the top layer.
- Garnish with chopped parsley and serve hot.
