Jordanian-Style Lamb Kofta Curry (كاري كفتة الخروف بالطريقة الأردنية)

Ingredients
- 500g ground lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 can (400g) diced tomatoes
- 1 cup chicken broth
- 1/2 cup coconut milk
- 2 tablespoons tomato paste
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, mix together the ground lamb, onion, garlic, parsley, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Form the mixture into small kofta (meatball) shapes.
- Heat the olive oil in a large skillet over medium heat. Add the kofta and cook until browned on all sides. Remove the kofta from the skillet and set aside.
- In the same skillet, add the diced tomatoes, chicken broth, coconut milk, tomato paste, garam masala, turmeric, paprika, and red pepper flakes. Stir to combine.
- Return the kofta to the skillet, spooning the sauce over them. Simmer for 20-25 minutes, or until the kofta are cooked through and the sauce has thickened.
- Sprinkle with chopped cilantro before serving.
