Jordanian-Style Lamb Stew (طاجن لحم بالطريقة الأردنية)

Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup green peas
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 4 cups beef or lamb broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and garlic. Sauté until the onions are soft and translucent.
- Stir in the tomato paste, ground cumin, ground coriander, paprika, ground cinnamon, and ground nutmeg. Cook for 2 minutes to toast the spices.
- Return the browned lamb to the pot. Add the chopped tomatoes, carrots, potatoes, and green peas. Pour in the beef or lamb broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
- Adjust the seasoning if needed, then serve the Jordanian-style lamb stew hot with rice or bread.
