Jordanian-Style Lamb Stew (طاجن لحم بالطريقة الأردنية)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup green peas
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 4 cups beef or lamb broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onions and garlic. Sauté until the onions are soft and translucent.
  3. Stir in the tomato paste, ground cumin, ground coriander, paprika, ground cinnamon, and ground nutmeg. Cook for 2 minutes to toast the spices.
  4. Return the browned lamb to the pot. Add the chopped tomatoes, carrots, potatoes, and green peas. Pour in the beef or lamb broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
  6. Adjust the seasoning if needed, then serve the Jordanian-style lamb stew hot with rice or bread.
