Jordanian-Style Shakshuka (شكشوكة بالطريقة الأردنية)

Ingredients

  • 6 eggs
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 4 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the chopped bell peppers and cook until they start to soften.
  5. Stir in the diced tomatoes, tomato paste, cumin, paprika, cayenne pepper, salt, and pepper. Simmer for 10 minutes.
  6. Using a spoon, create small wells in the tomato mixture and crack an egg into each well.
  7. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  8. Garnish with fresh parsley and serve hot.
