Ingredients
- 4 large artichokes
- 1 cup rice
- 250g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup olive oil
- 1 teaspoon allspice
- Salt and pepper to taste
- 2 cups water
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the stems.
- Scoop out the choke and the inner purple leaves to create a cavity for the stuffing.
- In a bowl, mix the rice, ground beef, onion, tomatoes, parsley, mint, olive oil, allspice, salt, and pepper.
- Stuff the artichokes with the rice and beef mixture, pressing it firmly into the cavities.
- Place the stuffed artichokes in a pot and add water. Cover and cook over medium heat for 1 hour, or until the artichokes are tender and the filling is cooked through.
