Jordanian-Style Stuffed Artichokes (كرش الخرشوف محشي)

Ingredients

  • 4 large artichokes
  • 1 cup rice
  • 250g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 2 cups water

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the stems.
  2. Scoop out the choke and the inner purple leaves to create a cavity for the stuffing.
  3. In a bowl, mix the rice, ground beef, onion, tomatoes, parsley, mint, olive oil, allspice, salt, and pepper.
  4. Stuff the artichokes with the rice and beef mixture, pressing it firmly into the cavities.
  5. Place the stuffed artichokes in a pot and add water. Cover and cook over medium heat for 1 hour, or until the artichokes are tender and the filling is cooked through.
  6. Serve the stuffed artichokes hot, garnished with additional chopped parsley and mint if desired.
