Ingredients

  • 4 large cucumbers
  • 1 cup rice
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Prepare the cucumbers by cutting off the ends and hollowing them out with a spoon, being careful not to puncture the skin.
  2. In a bowl, mix together the rice, onion, tomato, parsley, mint, cumin, paprika, salt, and pepper.
  3. Stuff the hollowed cucumbers with the rice mixture.
