Ingredients
- 4 large cucumbers
- 1 cup rice
- 1 onion, finely chopped
- 1 tomato, diced
- 1/4 cup fresh parsley, chopped

- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Prepare the cucumbers by cutting off the ends and hollowing them out with a spoon, being careful not to puncture the skin.
