Ingredients

  • 4 small eggplants
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup pine nuts
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the eggplants and carefully scoop out the flesh, leaving the shells intact. Chop the eggplant flesh and set aside.
  3. In a large bowl, combine the cooked rice, diced tomatoes, parsley, mint, pine nuts, chopped onion, minced garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  4. Stuff the eggplant shells with the rice mixture and place them in a deep skillet or baking dish.
  5. Heat the olive oil in a skillet over medium heat. Add the chopped eggplant flesh and cook until softened.
  6. Add the tomato sauce to the skillet and bring to a simmer. Pour the tomato sauce over the stuffed eggplants.
  7. Cover the skillet or baking dish with foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender.
