Ingredients
- 4 small eggplants
- 1 cup cooked rice
- 1/2 cup diced tomatoes
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup pine nuts
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the eggplants and carefully scoop out the flesh, leaving the shells intact. Chop the eggplant flesh and set aside.
- In a large bowl, combine the cooked rice, diced tomatoes, parsley, mint, pine nuts, chopped onion, minced garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
- Stuff the eggplant shells with the rice mixture and place them in a deep skillet or baking dish.
- Heat the olive oil in a skillet over medium heat. Add the chopped eggplant flesh and cook until softened.
- Add the tomato sauce to the skillet and bring to a simmer. Pour the tomato sauce over the stuffed eggplants.
- Cover the skillet or baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender.
- Serve the stuffed eggplants hot, garnished with additional chopped parsley or mint if desired.
