Jordanian-Style Stuffed Peppers (فلفل محشي)
فلفل محشي (Jordanian-Style Stuffed Peppers) is a traditional Jordanian dish that features bell peppers stuffed with a flavorful mixture of rice, ground meat, and aromatic spices. Ingredients
- 4 large bell peppers
- 1 cup long-grain rice
- 300g ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced tomatoes, ground cumin, paprika, cinnamon, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
- Add the rice to the skillet and stir to combine with the meat mixture. Cook for 2-3 minutes.
- Carefully cut the tops off the bell peppers and remove the seeds and membranes from the insides.
- Stuff the peppers with the rice and meat mixture, pressing down gently to fill the peppers evenly.
- Place the stuffed peppers in a deep pot and pour the chicken or vegetable broth over them. The broth should come about halfway up the sides of the peppers.
- Cover the pot and simmer the peppers over low heat for 45-50 minutes, or until the rice is fully cooked and the peppers are tender.
- Once cooked, remove the stuffed peppers from the pot and place them on a serving dish. Garnish with fresh parsley before serving.
