Jordanian-Style Stuffed Peppers (فلفل محشي)

Ingredients

  • 4 large bell peppers
  • 1 cup long-grain rice
  • 300g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the diced tomatoes, ground cumin, paprika, cinnamon, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
  4. Add the rice to the skillet and stir to combine with the meat mixture. Cook for 2-3 minutes.
  5. Carefully cut the tops off the bell peppers and remove the seeds and membranes from the insides.
  6. Stuff the peppers with the rice and meat mixture, pressing down gently to fill the peppers evenly.
  7. Place the stuffed peppers in a deep pot and pour the chicken or vegetable broth over them. The broth should come about halfway up the sides of the peppers.
  8. Cover the pot and simmer the peppers over low heat for 45-50 minutes, or until the rice is fully cooked and the peppers are tender.
  9. Once cooked, remove the stuffed peppers from the pot and place them on a serving dish. Garnish with fresh parsley before serving.
