Juche Jjigae (주체 찌개)
주체 찌개 (Juche Jjigae) is a traditional North Korean stew that is rich in flavor and history. This hearty and comforting dish is a staple in North Korean cuisine, often enjoyed with a side of rice.
Ingredients
- 1 block of firm tofu, cubed
- 2 cups of napa cabbage, chopped
- 1 large potato, peeled and diced
- 1 onion, sliced
- 4 cloves of garlic, minced
- 4 cups of vegetable broth
- 2 tablespoons of soy sauce
- 1 tablespoon of gochugaru (Korean red pepper flakes)
- 1 tablespoon of sesame oil
- Salt to taste
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the minced garlic and sliced onion, and sauté until the onion is translucent.
- Add the cubed tofu, chopped napa cabbage, and diced potato to the pot.
- Pour in the vegetable broth and soy sauce, then bring the mixture to a simmer.
- Stir in the gochugaru and season with salt to taste.
- Cover the pot and let the stew simmer for 45-50 minutes, or until the vegetables are tender.
- Once the stew is ready, remove from heat and serve hot.
