Juche Jjigae (주체 찌개)

Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of napa cabbage, chopped
  • 1 large potato, peeled and diced
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 2 tablespoons of soy sauce
  • 1 tablespoon of gochugaru (Korean red pepper flakes)
  • 1 tablespoon of sesame oil
  • Salt to taste

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the minced garlic and sliced onion, and sauté until the onion is translucent.
  3. Add the cubed tofu, chopped napa cabbage, and diced potato to the pot.
  4. Pour in the vegetable broth and soy sauce, then bring the mixture to a simmer.
  5. Stir in the gochugaru and season with salt to taste.
  6. Cover the pot and let the stew simmer for 45-50 minutes, or until the vegetables are tender.
  7. Once the stew is ready, remove from heat and serve hot.
