Ingredients
- 1 kg fresh kvarnerskih dagnji (Kvarner Bay mussels)
- 2 tbsp olive oil

- 2 cloves garlic, minced
- 2 large tomatoes, diced
- 1 bay leaf
- 1/2 cup white wine
- 4 cups fish or vegetable broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced tomatoes and bay leaf to the pot, and cook for a few minutes until the tomatoes start to break down.
- Pour in the white wine and bring to a simmer, allowing the alcohol to cook off for a few minutes.
- Add the mussels to the pot and pour in the fish or vegetable broth. Cover and cook for about 5-7 minutes, or until the mussels have opened.
- Season the soup with salt and pepper to taste. Discard any unopened mussels.
- Ladle the soup into bowls, garnish with chopped fresh parsley, and serve hot.
