  • 2 cloves garlic, minced
  • 2 large tomatoes, diced
  • 1 bay leaf
  • 1/2 cup white wine
  • 4 cups fish or vegetable broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced tomatoes and bay leaf to the pot, and cook for a few minutes until the tomatoes start to break down.
  3. Pour in the white wine and bring to a simmer, allowing the alcohol to cook off for a few minutes.
  4. Add the mussels to the pot and pour in the fish or vegetable broth. Cover and cook for about 5-7 minutes, or until the mussels have opened.
  5. Season the soup with salt and pepper to taste. Discard any unopened mussels.
  6. Ladle the soup into bowls, garnish with chopped fresh parsley, and serve hot.
