Kaalan Varuval (chettinad Mushroom Fry)
Kaalan Varuval, also known as Chettinad Mushroom Fry, is a delicious and aromatic dish from the Chettinad cuisine of Tamil Nadu, India. This spicy and flavorful mushroom fry is a perfect side dish for rice or roti.
Ingredients
- 500g mushrooms, cleaned and sliced
- 2 onions, finely chopped
- 3 tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin seeds
- 2 sprigs curry leaves
- 3 tbsp oil
- Salt to taste
Instructions
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for 2 minutes.
- Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes turn mushy.
- Add sliced mushrooms, salt, and curry leaves. Mix well and cook for 10-12 minutes until the mushrooms are cooked and the masala is well coated.
- Garnish with fresh coriander leaves and serve hot.
